Vinification

After “sun-drying” the grapes, for approximately 10 days, they go through a slow white wine vinification. It is aged in oak barrels, for 3 years.

Characteristics

Brilliant purple colour, with strong brown hues. Complex bouquet, which reveals aromas of dried fruit, nuts, coffee and cocoa. Very good structure and balance with rich taste, strong aromas from ageing and long-lasting aromatic aftertaste.

Food Pairing

Served as an aperitif, great with fruit dishes, tarts, ice-cream, desserts, as well as sweet starters like cheese pies with honey, rusks cooked in wine, cheesecake with wild cherries, and white goat cheese with honey. Blue cheeses like Gorgonzola.
