Winemaking
The 2 varieties were vinified separately with different harvest dates due to maturity. The grapes were kept in a cold room at a very low temperature and then pressed in the press with a very gentle program. Contact with the marc in the press lasted as little as possible so that we could get the result we desired. Alcoholic fermentation took place at a low temperature, while at the end, the wine lees were stirred. Immediately afterwards, the percentage of each variety that would participate in the blend was selected.
Characteristics
Light rose color. Intense and lively aromas of red fruits and notes of rose. Intense freshness in the mouth, full body and impeccable balance. Delicate with nice intensity and a sense of minerality that goes well with food.

Cretan Dakos salad, dishes with strong spices and herbs, pasta with shrimp.
